This is a large-volume prepared mix that is packed with tastes of a festive period, which makes it ideal for your festive gathering. Save the extra citrus syrup to use in breakfast cocktails, sweets, or to mix more rounds of the drink.
Bikini Recipe
Serves 10 guests
To make the Clementine Cordial (yields 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar
For the Cocktail (makes 850ml, enough for 10)
400ml premium vodka
100ml classic gin
150ml peach liqueur
200ml citrus syrup (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, for finishing
Directions
Making the Cordial: Combine every components into a pan, bring to a light boil, stirring so the sugar melts. After that, remove from the burner allowing it to cool fully. Decant into a clean bottle, cap it and store chilled, where it will keep for up to four weeks.
Preparing the Batch Mix: Combine all the spirits and syrup in a large bottle, let it rest for 60 minutes, then filter it , ideally through cheesecloth, making it completely strained.
When ready to serve: Add 85ml of the premix to a mixing glass filled with ice, and stir carefully for one minute to cool it down. Filter to a frosted cocktail glass or a similar vessel, decorate with a few cranberries and finish by giving it a light spray of the essential oil above the glass.
